Easy Soba Salad

It’s fun to get wild in the kitchen with new ingredients and daring flavor combinations. But sometimes I find that the oldest recipes are the best ones. This easy Soba Salad recipe is one of my favorite go-to dishes that I’ve been making for years. The recipe was originally stolen borrowed from my step-mom (along with this recipe for Spicy Tuna Hand Rolls). And it’s been on constant rotation in our kitchen ever since. It’s not fancy or complicated. But it is totally delicious.

This soba recipe is easy to modify for large or small groups, and it easily transforms from side dish to hearty main dish by adding a simple protein like tofu, or our current favorite: grilled salmon. And the best part? It’s easy to make. Like, ridiculously simple. Which is perfect for us right now, because I swear this kid never sleeps. He’s the king of 10-minute naps, which is SO not enough time for mommy to cook dinner. Or do the dishes. Or the laundry. Or anything else, really. Also, I’ve started calling myself mommy. Don’t mind me. 

Depending on where you live, you may be able to find soba (buckwheat) noodles, miso dressing, and furikake seasoning at your local grocery store. If not, they’re guaranteed to be at your local asian market. If these ingredients are new to you – don’t be scared! You’re gonna love ’em. Trust.

If you only have 10 minutes for dinner, give this Soba Salad recipe a whirl. And if you’ve got more time on your hands, don’t rub it in.

Easy Soba Salad
Serves 4

Ingredients
1/2 package, Soba noodles
2 heads of romaine lettuce, chopped
3 green onions, thinly sliced
1 english cucumber, sliced (*if you can’t find an english cucumber, a regular old cuc’ will work – but I’d recommend slicing in half and de-seeding)
furikake seasoning, to taste
1/2 cup store bought miso dressing
Instructions
Boil soba noodles as directed and then let cool slightly.
Add noodles to a large bowl along with the lettuce, green onion, cucumber. Add a shake of furikake seasoning (or more, if you like!). Toss with the dressing (starting with half, and adding more as desired).
