Mango Margarita Cupcakes with Mango Lime Buttercream Frosting

It’s National Margarita Day, and you know what I’d be doing if I weren’t 33 weeks pregnant. But because margaritas are a pregnancy no-no, this year I had to get creative in order to join in on the celebration.

I’ve seen some delicious looking margarita cupcakes on Pinterest, but you know I’m really picky about my margaritas. I don’t love margarita mix AT ALL. I like my margaritas made with fresh citrus. And the more tropical, the better. So I experimented turning my favorite margarita – Mango Margarita – into a cupcake. And the result? Pretty darn delicious:  Mango Margarita Cupcakes with Mango Lime Buttercream Frosting are almost as good as the real thing.

There’s a smidge of tequila in the buttercream frosting; otherwise these cupcakes are completely “virgin”. But even just a hint of tequila, combined with the mango puree, lime juice and lime zest will really fool you into feeling like you’re boozing it up. Promise. And I’m not just saying that because I haven’t had a real margarita in 7 months now. Even Sam loved these cupcakes. Like, really loved them. And he doesn’t have a sweet tooth.

As much as I loved these cupcakes, I have to be completely honest for a minute. You know what I’ve been craving more than margaritas? An ice-cold brewskie.  Totally not like me. So there you go; my weird pregnancy craving. Looks like this baby boy is going to be a beer fan, just like his dad. That’s okay though… more margaritas for me!

Mango Margarita Cupcakes with Mango Lime Buttercream Frosting

Mango Margarita Cupcakes
1 1/2 mangoes, pureed (note: if you use frozen mangoes, make sure to defrost and drain the excess liquid off well)
1 1/4 cups flour
1 tsp baking powder
1/4 tsp salt
1 cup sugar
1/2 cup butter, at room temperature
2 eggs
1 tsp grated lime zest
Mango Lime Buttercream Frosting
1/2 cup butter, softened
1/2 cup mango, pureed
zest and juice of one lime
4 -5 cups powdered sugar
1 T tequila
Optional garnishes: sugar crystals, lime wedges
Instructions
Preheat oven to 350 degrees and line muffin cups with cupcake liners.
Combine flour, baking powder and salt in a small bowl and set aside. On medium speed, beat the sugar and butter with a mixer until light and fluffy, about 2-3 minutes. Add the eggs and beat until blended. Lower the mixer speed and gradually beat in the flour mixture. Next, stir in the pureed mango and lime zest. Divide batter among liners, filling about ⅔ full. Bake for 20-25 minutes or until toothpick inserted into centers comes out clean. Cool 10 minutes in the cupcake tray, before transferring to a rack to cool completely.
Frosting
In a mixing bowl, cream butter until light and fluffy. Add mango, lime zest and juice, and mix well. Add powdered sugar, 1 cup at a time, until desired spreading consistency.
Spread or pipe frosting onto cooled cupcakes, and garnish with sugar crystal “salt” or lime wedges as desired.
